Lakerda is fish meat specially prepared for long-term storage. It is essentially made from bonito, but since bonito is scarce today, it is produced by curing the cleaned fillets of mackerel in a cool, salty, pressed, bay leaf-lined container for weeks. The salt is rinsed off, and it is served like a salad with onion, black pepper, olive oil, and lemon.
